  1. Prepare the Rice Noodles. Wash and drain. Boil noodles until just cooked. Drain and rinse under cold water. Drain and set aside.
  2. In a small bowl mix the sauces. Add the light soy sauce, dark soy sauce, oyster sauce, fish sauce, sugar and pepper and stir well.
  3. Heat a wok, or large fry pan, to a high heat. Add the vegetable oil. Once hot add the sliced Chinese sausage, minced garlic and chilli paste. Stir fry until cooked and fragrant.
  4. Add the prawns and fish cake to the wok and stir fry for about 30 seconds.
  5. Add the precooked noodles to the wok and stir fry noodles. Add the sauce a few spoonfuls at a time while mixing gently.
  6. Push the noodles to one side of the wok. Crack in the egg and stir until egg is cooked. Then mix through the noodles.
  7. Add the Chinese chives and bean sprouts. Continue stir-frying noodles until vegetables are cooked.
  8. Serve hot – add a spoonful of Sambal Belacan if you enjoy spice!
